Hearst Ranch Winery, Three Sisters Cuvée White Wine Paso Robles
The chalky, limestone laden soils these grapes were grown in translates to a beautiful tactile sensation on the palate. The aromatics burst with lively floral notes. Once on the palate there is an amazing interaction between the brilliant acidity and the bone-dry mineral notes. While the textures are busy playing back and forth, lush, Viognier inspired flavors delight with a delightful juiciness. The overall experience is one that is refreshing and crisp with a very elegant framework
-
Backsberg Estate Cellars, Chardonnay Kosher Paarl

Natural acidity is balanced by sweet fruit flavours of white peach, giving a medium-bodied wine with a long, rewarding finish. Please note that this wine is Muvushal and Kosher for Passover. Made under the auspices of the Cape Town Beth Din and the OU of the United States.

No new oak; fully developed. Dry wine with medium acidity and tannins; medium alcohol; medium body and flavor intensity. Blackberry, black cherries, freshly plowed earth with notes of black raisins, stoniness; neutral oak and mushrooms. Silky mouthfeel/texture; soft tannins; medium plus finish. Very good; drink now. -
Hearst Ranch Winery, Three Sisters Cuvée Red Wine Paso Robles
This wine, vibrant ruby in appearance, offers elegant yet concentrated aromas and flavors of ripe cherries and vanilla. Grenache wholeheartedly embraces chalky soils, translating them into a silky, mineral-laden structure. These positive attributes are why we chose Grenache as the driving force behind our 2017 Three Sisters Red. The addition of Syrah, Petite Sirah & Mourvèdre help polish the presentation of this wine. Incredibly focused fruit and supple, mid-weight tannins play very nicely against the firm acid backbone. Possessing bright exuberance.
-

Domaine Patrick Lambert, Chinon Gourmandise Rouge
The 2019 "Gourmandise" is a beautiful "drink young" cuvée from Patrick Lambert, made from Cabernet Franc vines grown on sandy gravel soils near the Vienne. The wine shows a bright black/red color with lush high-toned aromas of crushed strawberry and black raspberry, with hints of citrus and pepper. The palate is supple and bright with luscious black raspberry and red currant fruit, quite lush and full-bodied in this superb vintage for the Loire, light but deep and long with hints of bitter chocolate and cocoa, but still with refreshing acidity. Serve this lovely wine quite cool with charcuterie and grilled chicken, pork or burgers, it's a perfect quaffing Cab Franc to drink over the next 2 years
-

-
Lammershoek, LAM Pinotage
Natural fermentation, unfiltered with minimal skin contact. Light red, translucent color. The nose displays spices fermented strawberry, rose, tar, black tea, earth and a lot of campari. Medium-high acidity on the palate, ruby grapefruit bitterness, and campari again. No tannins due to the min skin contract.
-
Natte Valleij, Swartland Cinsault
Unlike those from the terroir of Darling and Simonsberg-Paarl this spends twelve months in concrete, rather than barrel, in order to preserve the purity of the cultivar. Whilst the Darling is bombastic & energetic this seems more somber, more serious and more refined. A subdued nose of raspberry, cranberry, crushed violet petals & new leather. The palate is sumptuous, with red cherry, pomegranate, oregano & black pepper

Ponysaurus BIÈRE DE GARDE
An homage to higher-gravity French farmhouse ales, Biere de Garde roughly translates to “beer for keeping.” Our version reflects the historical realities of this style of farming, when brewers made do with what was on hand. With three types of barley, wheat, rye, and oats, its aroma smacks of apple, pear, almond, and vanilla, with just a hint of lemon rind.
-
Ponysaurus INDIA PALE ALE
For our IPA, we used the traditional West Coast India Pale Ale as our template, then forgot where we put the template, then created something completely different. It’s a simple, easily enjoyable IPA with a crisp bouquet of lemon citrus, grapefruit rind, and melon. Tangerine and passion fruit dominate the hop flavor, but without the usual overwhelming bitterness.
-

-
Ponysaurus PILSNER

-
Ponysaurus EXPORT STOUT
Most beer drinkers are familiar with the Dry Irish Stout, popularized by a certain brewery in Dublin. The Export Stout is a somewhat bigger version of this beer made to survive oceanic travel, yet still retain the dry, roasted flavors of the original without out being too sweet or cloying
-
Ponysaurus RYE PALE ALE
Originally brewed exclusively for Dashi in downtown Durham, the Rye Pale Ale has a light body, firm bitterness, and spicy/piney aroma designed to complement and contrast a bold, umami-filled meal. Due to it's quick popularity Rye Pale Ale can now be found at the Ponysaurus taproom and elsewhere in the Triangle.
-
Ponysaurus SCOTTISH ALE
Reflecting the Scottish tradition of brewing beer with a small amount of hops so as to avoid unnecessary interaction with British traders (the bastards), our Scottish Ale is a rich, smooth, malt-focused beer that pours incredibly dark. Nutty Marris Otter malt provides deep hits of caramel, coffee, and chocolate in both the aroma and flavor. Like a drinkable kilt for your gullet.
-
